This herb is dried garden marjoram, harvested during its flowering period. Originally from the Middle East and now cultivated almost all around the world, marjoram is a classic spice in Mediterranean cuisine. It has a characteristic aroma and a slightly pungent taste.

In Polish cooking, it’s most often used for homemade cold cuts, seasoning meat dishes, sauces, roasts, stuffings, pâtés, vegetables, soups (such as pea soup, bean soup, potato soup, eel soup, żur, tripe soup), dumplings, and mushroom dishes. To enhance the aroma, marjoram is frequently used together with thyme, especially in low-sodium cooking.

The way you use marjoram depends on the dish. For meats and sausages, it’s used before roasting or cooking; for other dishes, you might add it toward the end of preparation for better flavor.
