Ingredients You Will Need

  • 2 leeks, white part only
  • ½ cup of finely chopped flat parsley, including parsley root
  • 8 potatoes (Medium)
  • 6 carrots
  • 1 chopped celery root
  • 1 tablespoon olive oil
  • 1 dozen hardboiled eggs
  • Dill pickles without the juice, shredded
  • 1 ½ cups of mayonnaise
  • ½ teaspoons of black pepper
  • 1 cup of cooked green peas
  • 1/2 cup of green onion

Total Time: 2hr 20 mins

Step One – Prepare the Leek

First of all, you need to dice the leeks finely and mix the chopped parsley and parsley roots with them. At the same time, add the oil and salt to the mixture. The oil and salt will soften the leek, which will make them taste better. After making this, let the mixture be set aside.

Step Two – Boil Your Veggies

Now, it is time to take out your large Dutch oven and use it for the preparation. First, you need to fill the Dutch oven with salt and water. And then, add the potato, celery, and carrots to the salted water; watch over the pot until it boils. Well, now you are much closer to making this Polish veggie salad!

When the water starts to boil, let it simmer on medium heat for 20-30 minutes. And keep checking all the veggies with a fork if they are tender or not. 

If the potatoes and other vegetables are tender enough, drain the water let them cool down; after cooling down, peel and cut the cooked vegetables into 1/3-inch small cubes.

Step Three – Combine Everything

When you are done cutting the veggies, please place them in a large salad bowl. And then, break down the hardboiled eggs, chop the whites crumble the egg yolks nicely, and add them to the mixture as well. 

Now one by one, add pickles, cooked peas, rich mayo, green onions, salt, and pepper per taste. You can skip the celery root if you want.
