This oeuf mayo egg dish makes for a great appetizer or hors d’oeuvres variées, and today we will be teaching you how to make the dish along with the recipe for the delicious homemade mayonnaise. A lot like a simple egg salad/egg sandwich, this recipe won’t need many ingredients, and you can prepare it in less than an hour!
Ingredients You Need to Make Oeuf Mayonnaise
You don’t need a whole lot of ingredients for this recipe. In fact, all you home cooks probably have all the ingredients needed for this recipe which can be thought of as a deconstructed egg salad. We have listed down the ingredients below, but you actually switch a lot of things in this list to customize this recipe!
- Eggs
You will need Eggs that are going to be cooked into hard boiled eggs and be used for making the mayo. Also, try to use pasteurized eggs.
- Neutral Flavored Oil
Neutral flavored oil should be used for making the mayo. Something like olive oil will be too overpowering.
- Salt
Salt is needed for the dish to be even edible.
- Black Pepper
This is necessary for adding a hint of smokiness. Only add pepper if you can handle a bit of heat.
- Dijon Mustard
Itmight not be everyone’s favorite, but when mustard is added in the right quantity, it makes the mayo taste magical. Be careful not to add too much mustard because it can be overpowering.
- Vinegar or Lemon Juice
At least one of these ingredients is essential for the mayo to taste good. The acidity you get from white wine vinegar or lemon juice is key to making good mayonnaise.
- Lettuce

Making the Mayo
You can technically make this dish with store-bought mayo, but it takes the authenticity away from the dish and the recipe. Hence, we will be giving you a recipe for a homemade mayo which is super simple.
Step 1: Set Your Food Processor
We will be using a processor for making the mayo, but you can use an immersion blender or even a whisk. Use your processor with a small bowl attachment. It’s best if your bowl isn’t too wide, or else the mayonnaise may not emulsify properly.
Step 2: Process a Whole Egg for 20 Seconds
Add 1 large room temperature egg to the processor and let it process for just about 20 seconds. A lot of people use just yolks, but this recipe uses a whole egg rather than a yolk.
Step 3: Add All the Flavorings and Process
Add 1 tablespoon of Dijon mustard, ¼ teaspoon of salt, 1 roasted garlic clove, 1 tablespoon of wine vinegar, and 1 teaspoon of freshly squeezed lemon juice to the processor. Then, let that process for about 20 seconds more. You can add more salt or pepper if you want, it depends on your taste.
Step 4: Gradually Add the Oil
After that, slowly add the oil to the processor while it is turned on. It is a must that the oil is added slowly, or else the saturated fat will not emulsify properly, and you will get soupy mayonnaise.
Remember to scrape the sides of the bowl if you see a lot of the mixture is stuck and unmixed. After adding the oil gradually, you will need to process the mayo for about 10 to 20 seconds for it to be done. If it’s still thin, keep on processing it, and mix in some more oil slowly.
Step 5: Do a Taste Test
Taste the mayonnaise when it is done and check to see if anything needs to be added. You can mix in more mustard, salt, lemon, or vinegar to the mayo to alter it according to your taste.
Making Boiled Eggs and Assembling the Dish
As you can tell by the title of this section, we will be showing you how to make hard boiled eggs and how to assemble this egg mayonnaise.

Step 1: Put 4 eggs in Boiling Water
To make your hard boiled egg, you need to grab a small saucepan and fill it with hot water. Then place the saucepan on your stovetop and let the water come to a boil or strong simmer, and then add 4 eggs.
Step 2: Let Them Cook for 10 Minutes
Set a timer for 10 minutes when you add the eggs to the small pot for the eggs to be cooked properly. While the eggs boil, you can do other things but don’t get completely distracted.
You don’t want to boil your eggs in the small pot for too long, or else the yolk will become cooked too much. When you boil your eggs too much, the yolks become ashy and chalky.
Step 3: Use Chilled Water to Make Peeling the Eggs Easier
Take a small bowl and fill it with cold water for you to peel your eggs in. Submerge the eggs in the cold water once they’re done. You can also add ice to the water to be able to peel the eggs more easily.
Step 4: Cut the Eggs into Halves
Then, use a sharp knife to cut your boiled eggs in half and check if it’s cooked properly. Make sure to use a sharp knife, or else the yolks of your eggs might get smushed.
Step 5: Make the Mayo Sauce
Take half a cup of your mayonnaise and add 2 tablespoons of water to it. Whisk them together to create a smooth and delicious sauce.
